SAVOURY PUFF PASTRY SHAPE 'SANDWICHES'

create puff pastry from scratch.
Use pastry or cookie cutters shapes
Roll out the pastry sheets, cut two shapes each the same, repeating.
spread first shape pair with the fillings, using a spoon, smooth down with a knife
place a the second puff pastry shape of the pair on top of the first to make the 'sandwich'
sprinkle some grated cheese on the top, with pinch of peppers or herbs to taste or a dash of sauce.
cook at 200 - 220 degress Celsius for 15-20 minutes until golden brown, adjusting times ...and temperature..for your appliance. do a dry run with a shape first, to test to get optimum from your cooking appliance.
Garnish with a squeeze of cream cheese spread from a tube or icing bag, with herbs, and a square of ham or pinch of tuna AFTER baking.

Blitz the flour and salt in a food processor and add the water. Work into a ball, cover with cling film and chill for 1 hour. This rough dough is called the detrempe.
Soften the cold butter between two sheets of baking parchment by pressing with a rolling pin. Cut in half, lie on top of each other and repeat until pliable. Reshape into a rectangle.
Flour your work surface, roll the pastry into a circle and put the butter in the centre. Fold the pastry sides in to cover the butter.
Roll out a little and mark the dough into thirds. Fold the bottom third up and the top third down. Make a quarter turn, seal the edges by pressing with the rolling pin.
Roll the dough out again and mark into thirds. Fold the bottom third up and the top third down. Seal the edges again, give the pastry a quarter turn and repeat.
Cover with cling film and chill for 20 mins until firm and cold.
Roll and fold four more times, chilling after two.
Chill for an hour before using.
PREPARATION TIME 1 HOUR 40 MINUTES APPROX.

Directions
PREPARE the mashed potato , adding (optionally) milk and butter, salt and pepper to taste, and maizemeal as a binding agent.
mash up finely, add to bowl 1. Or make up mashed potato mix per its directions
GATHER & PREPARE the herbs, chopping finely or collected dried, bottled.
PREPARE THE TUNA, DRAINING IT, flaking with a fork place in bowl 2
PREPARE THE CREAMCHEESE in icing bag or readymade tube
prepare the onions, spring onions..chop finely
PREPARE THE CHEESE, GRATING FINELY
PREPARE THE ONIONS, SPRING ONIONS, TOMATO CHOPPING FINELY keeping vegetables separate, and cleaning chopping surfaces and implements between ingredients
LASTLY, PREPARE THE HAM, DICING INTO FINE CUBES by hand or using a mandolin. place ham separately. PLACE IN BOWL 3
SEPARATE THE POTATO MASH INTO TWO BOWLS, using bowl 4
mix the grated cheese into the potato and folding in the VERY finely chopped onions ... into bowl 1, add diced ham, folding it in evenly, add herbs and sauce to taste. leave some ham cubes for the garnishes. cheese should be 25% or less of filling. Gluten free puff pastry - recipe 1
Ingredients
100g gluten free flour*
100g cold butter, cut into cubes
60ml cold water
2 drop lemon juice
Pinch salt
Method
- Put flour, salt, butter, lemon juice and water into a bowl and mix to incorporate the water
- Empty out onto floured cling film, roll into a rectangle, book fold then wrap in cling film. Place into the fridge for 10 mins
- Take out of the fridge, unwrap but leave on the cling film. Turn and roll out to a rectangle, book fold and return to the fridge. Repeat this process a further three times
- Roll out your pastry to 3mm once you're ready to use it.
Gluten free puff pastry - recipe 2
Ingredients
*300g gluten free flour*
Pinch salt and pepper
200ml water
250g lard/butter
Method
- Place all dry ingredients in a mixer add water to bring together
- Divide the loose dough into two portions and roll into two balls
- Pat each ball into a rectangle and spread softened butter onto one rectangle
- Cover the buttered rectangle with the second one and wrap in cling film
- Put pastry into the fridge for 1 hour
- Take the pastry out of the fridge and roll the sandwiched dough until it is a third bigger
- Fold the pastry in half, and half again until you have done seven turns in total
- The pastry is ready to use.

Ingredients
60g rice flour*
60g brown rice flour*
60g millet flour*
60g cornstarch
¼ tsp salt
10g icing sugar
1 tsp xanthan gum
¼ tsp guar gum
85g cold water
188g unsalted butter
Method
Place all dry ingredients in a mixer, add the water to bring together- Divide the loose dough into two portions and roll into two balls
- Pat each ball into a rectangle and spread softened butter onto one rectangle
- Cover the buttered rectangle with the second one and wrap in cling film
- Put pastry into the fridge for 1 hour
